HEALTH FOOD WALNUT SALAD INGREDIENTS

2 Apples
50 gms Beans
50 gms Walnuts
100 gms Salad Leaves
50 gms Chopped Onion
2 tbsp Extra Virgin Olive Oil
2 tbsp Balsamic Vinegar
1 tbsp Honey

METHOD

1.Whisk together balsamic vinegar, honey, extra-virgin olive oil.
2.In a bowl, toss together salad leaves, beans, onion, and apples (thinly sliced)
3.Toast and finely chop walnuts, add to the above mixture. Mix in the dressing.
4.Keep in refrigerator and serve chill.

PANCAKE

2 Egg Whites
200 ml Skimmed Milk
60 gms Whole Wheat Flour
½ tsp Baking Powder
1 tsp Sugar (optional)
50 gms Roasted Almonds & Peanuts

SAUCE

1 cup Chopped Fresh Peaches or Soft Fruit or Berry 1 tsp Honey 1/2 tsp Freshly Squeezed Lemon Juice

METHOD

1.Mix skimmed milk, eggs in a small bowl. Stir until smooth.

2.In a medium bowl, combine flour, baking powder and sugar. Stir until well blended and add liquid mix and stir well.

3.To prepare sauce: Combine peaches, honey and lemon juice in a pan, and cook over medium heat until peaches are soft. Keep warm if desired.

4.Heat sauce pan and ladle 2 Tablespoon of batter. Flip pancake and cook for 1-2 minutes on the other side. Serve warm with fruit sauce.
